Just to name a few…Potassium, magnesium, high in Vitamin A! Good for skin, nails, teeth. Anything dark & purple is rich in vitamins & minerals. Great for salads and with cottage cheese.
You Need:
1 or 2 bunches of organic, raw beets. Mason Jar, a veggie peeler, a knife, cutting board, a glass pickle pebble stone, a silicone pickle pipe, 1-2 cloves of garlic, 2 teaspoons fine grind sea salt, 1 teaspoon sugar & 2 cups distilled water.
I bought “Mason Tops” pebbles & pipes, but you can ferment using the “burp” method without them! You can see the Masontops pieces in my sauerkraut recipe.
Directions:
Bought one bunch beets(next time I may buy 2) from the organic section at Kroger. Uncleaned & refridgerated, they keep 2-4 weeks. Otherwise, we made them right away. You can use the chard, but this time we composted it.

I broke off the tops & trimmed the “tails” I told Alva, my 4yr old son and assistant, that they were Mouse or Dragon tails!! 😂 He got a kick out of playing with them & cutting them. I did not blanch, boil or bake them because we wanted crispier beets. But, if you like the softer kind, you can add this step.

I peeled the beets using a veggie peeler. Then, it’s up to you how you would like to slice. I tried to slice mostly thin discs.
Now I put all of my slices in 2 clean Mason jars. You can use 1, but my husband helped and he used 2.
With one mason jar, add 2 cups distilled water, a clove of garlic, two teaspoons of fine grind sea salt (we used pink Himalayan), and one teaspoon sugar.
We put the glass pickle pebble weight on top and the silicone pickle pipe. Now we will ferment for 2-3 weeks and I will update with photos and reviews! Keep your jars in a dark, warmer place. It’s my first time making pickled beets🤗ps. Use tape w a date or write on your calendar so you can keep track.

There are lots of variations and it’s all about personal taste. My son loves the purple dye from the beets and stamped his hands on paper. 👋👋
